Perfect Summer Salad

What you need:

  • 1 cup spinach
  • 1 cup sliced strawberries
  • 1/2 avocado
  • 1 cup heirloom tomatoes, sliced
  • 1/4 cup sliced almonds
  • 1 tbl  sesame seeds

for the dressing:

  • 1 cup avocado oil
  • 1 teaspoon sea salt
  • 1 teaspoon grated onion
  • 1 tsp ground stone ground mustard
  • 1/4 cup cranberries
  • 1 tbl poppy seeds
  • 2 tbl chopped shallot
  • 2 tbl cide vinegar
  • 1 tbl agave

In food processor combine all dressing ingredients, adding poppy seeds last.

Get makin’:

salad: prep and slice all salad ingredients and set aside.

for the dressing: in the food processor combine all dressing ingredients, adding poppy seeds last.

Then add all salad ingredients together and drizzle with the light cranberry poppy seed dressing.
