Raw vegan tofu lasagna with walnut pesto and sun dried tomatoes

I was surprised at how amazing this tasted..talk about a win and a new recipe to add to my “remake” list. I didn’t tell the boy what was in it before he ate it.. and he LOVED IT.

The version I made – wasn’t 100% raw since I decided to cook it. You can eat it raw, place in a dehydrator or cook in the oven if you wish. We ate this whole thing by ourselves, so be sure to make way more for others or if you want to have anything for leftovers, because here, we fought over the last bite.

What you need:

  • 8 in’ Square baking dish (or any size you prefer, I would use a larger one next time!)
  • *sprayed with coconut oil.

Lasagna noodles:

  • 1 zucchini

Marinated veggies + tofu layer:

  • 6 small Heirloom tomatoes (diced)
  • 1 red pepper (diced)
  • 2 tablespoons Chosen Foods avocado oil
  • 1 package tofu (diced)
  • 2 tablespoons of “healthandus special seasoning blend”

Walnut pesto:

  • 2 cups fresh basil
  • handful of spinach
  • 1/4 cup walnuts
  • 1/4 cup pumpkin seeds
  • 2 tablespoons of “healthandus special seasoning blend”
  • Juice from 1 lemon
  • 1 peeled garlic clove
  • 2 tablespoons Chosen Foods avocado oil

Ingredients for other layers:

  • sun-dried tomatoes (not the kind in oil!)
  • handful spinach
  • soycheese ( if you want it)
  • fresh basil

Get Makin’:

To prepare the veggie + tofu layer: dice the tomatoes, tofu and red pepper and put in a bowl. Add avocado oil and mix then add “Healthandus” seasoning and mix until evenly covered. Put in the dehydrator or oven – at it’s lowest temperature – to being the taste marinating

To make the pesto: pulse all the ingredients in your food processor until it becomes a pesto-like consistency, adding water or other liquid as needed. Put in a bowl and set aside.

To make the noodles: slice the zucchini on a mandolin into thin pieces.

Assembly: lay two noodles beside each other, slightly overlapping. Next add each layer, fully covering the last layer. The veggie and tofu layer + another layer of noodles + layer of spinach + soycheese + pesto walnut layer + the last of the veggie tofu mix + layer of basil and top with soycheese + sundried tomatoes.
