Vegan cauliflower onion soup

It is still summer? It feels like fall is fast approaching here in Seattle and we are excited for fall soups, almost too excited that we wanted to make a summer/fall transition and tried this vegan cauliflower onion soup! It turned out great and was the perfect lunch for this rainy day.

What you will need:

  • 1 cauliflower
  • 1 can of coconut cream
  • dash of dried onions
  • 1 carton of shitake mushrooms
  • 1 clove of garlic
  • 1 handful of fresh basil leaves
  • 1 avocado
  • 1 onion
  • dash of sea salt
  • dash of pepper
  • dash of “healthandus seasoning”

Get makin’:

  • gently boil 1 large cauliflower in 2 cups of water
  • add Coconut cream and all seasonings (dried onions, sea salt, pepper, “healthandus seasoning”)
  • in a separate pan, first sauté garlic in coconut oil or avocado oil, then add onions and mushrooms.
  • add sauté blend into cauliflower pot and whip together
  • serve with avocado slices, basil and finish with cracked pepper
