Banana Walnut Pancakes (v + gf)

Happy Sunday! We were craving pancakes today and haven’t had them in a while, so we created a new version, Banana Walnut cakes. These are such good pancakes, that you could eat them for any meal, they would even be great for dessert by adding cocoa nibs or fresh fruit. These pancakes taste better than “normal” pancakes and they are healthy for you-gluten free, sugar and dairy free. Its a very quick recipe and takes about 5-10 minutes to mix together before you start cookin’.

Topped with fresh blueberries, walnut pieces, sliced banana, strawberries, raspberries, really whatever you have in the house- throw it on there and they melt in your mouth.

What you need:

  • 1 cup of steel cut oats
  • 1/3 of a cup of ground almonds
  • 1 cup of water
  • ¼ of a cup of ground flaxseed
  • ¼ of a cup of chia seeds
  • ¼ of a cup of dried cranberries
  • ¼ of a cup of walnuts
  • 1 ripe banana
  • 2 tablespoons of pure maple syrup
  • 2 teaspoons of cinnamon

For the topping:

  • 1 ripe banana, sliced
  • a handful of blueberries
  • a handful of raspberries
  • walnut pieces
  • pure maple syrup

Get Makin’:

Start by placing the oats into a food processor or blender until they are smooth. Add in the banana, the the remaining ingredients (except the toppings)– blend until a smooth mixture forms. At this point, the mix should be thick, not too runny.

Use a non stick pan and being dropping your pancake mix onto the pan with a spatula until all your mix is gone.

Cover your healthy stacks with maple syrup, blueberries, walnut crumbles and raspberries (really any toppings you like) and serve.
