Its going to be a H-O-T week here in Seattle, so we are finishing off the summer right. Cool off with a refreshing watermelon mint salad. We have been receiving requests for a few meal ideas that incorporate different types of cheese so we threw in goat cheese to this salad. You can completely omit it, making it raw and vegan.
What you need:
- ½ watermelon, sliced in cubes
- fresh mint, diced
- 1 tbl pine nuts
- 1 tsp goat cheese (if you wish! Without it, it’s a raw vegan meal)
For the dressing:
- 1 cup fresh blueberries diced
- 1/2 cup avocado oil
- 1/4 cup balsamic
- 1 tbl pure maple syrup
blend all ingredients together
Dice watermelon, dice fresh mint, add both in a bowl and sprinkle with pine nuts and goat cheese. Drizzle blueberry vinaigrette and there you go, your perfect summer salad is ready in under 5 minutes.
