You don’t have to be vegan or vegetarian to love these curry quinoa burgers. They were simply delicious, and adding the homemade hummus and sliced avocado on top, made them divine! We made a double batch so we could re make later this week.
Not only are these a perfect vegan meal, but these curry quinoa (supergrain) burgers are packed with nutrients, fiber, protein and vitamins. Quinoa is one of the most protein rich foods we can eat, more than meant and contains twice as much fiber as most other grains. Did you know that consuming curry powder in your diet has anticancer benefits and helps with cholesterol management? Turmeric, one of the main spices in curry powder, may lower your risk for diabetes and helps control blood sugar. Curry powder that contains coriander may help remove toxic heavy metals, such as lead and mercury from the body, hello detoxification!
What you need:
1 cup of cooked quinoa
1 small zucchini, diced
1 small squash, diced
1 cup of ground flaxseed
2-3 large garlic cloves
½ cup Italian parsley (remove stems)
½ cup fresh cilantro (remove stems)
2 Tbsp fresh lemon juice
2 tsp ground cumin
1 tsp ground turmeric
1 ½ tsp ground coriander
¼-1/2 tsp crushed red pepper flakes

Place garlic, parsley, cilantro in a food processor and process until mixture is finely chopped, then add zucchini and squash until finely chopped.
Add all other ingredients and process; you want the mixture to have a bit of its texture left, so you can form the patties. If mixture is too dry, add a few drops or water.
Transfer the mixture into a bowl and refrigerate for 30 minutes. Form into patties then place on a baking sheet and back for 8-12 minutes. Patties should be nicely browned and crisp on each side, but don’t overcook!
If you make extra, which you should, they could be refrigerated for up to a week.
