Raw nectarine and peach cobbler

Such a delicious fall treat that is healthy, raw and vegan too. We love nectarines, dates and peaches, making this a perfect dessert. 20130912-105000.jpgWhat you need:

  • 5 nectarines, sliced
  • 7-10 ripe peaches, sliced
  • 1 pound of pitted dates
  • 3 cups of pecans
  • 1 tsp of cinnamon
  • 8″ x 1 3/4″ Tart pan (ceramic or metal with removable bottom will work)

Get Makin’:

For the crumble crust: in a food processor combine dates, pecans and cinnamon. Make sure and set aside 1 cup of dates and 1 nectarine for the drizzle.

For the drizzle: blend 1 cup of dates and 1 nectarine in the food processor with a dash of cinnamon.

To put together: Cover the bottom of the pan with the crumble crust, and then add a layer of sliced peaches. Add a second layer of crumble crust followed by a layer of nectarines. Add the nectarine drizzle and your ready to serve!
