Its a vegan fall soup kind of day! This harvest vegetable is healthy and filling.

6 sweet potatoes, peeled and diced
1 quart organic vegetable broth
1 zucchini, diced
1 onion, diced
1 red pepper, diced
1 can organic black beans
2 tbl healthandus seasoning
2 cloves of garlic, peeled and diced
1 tbl coconut oil
Place coconut oil and diced garlic in large sauce pan on medium. Once garlic is slightly turning yellow or has a garlic aroma (hopefully filling up your kitchen with amazingness), add vegetable broth then add in all ingredients (besides avocado). Cook for 15-20 minutes, the soup will be ready when the sweet potatoes are soft. Serve with diced avocado and enjoy!
