We got dried Turkish apricots this weekend and had organic garbanzo beans in the pantry, so we whipped up a ….Turkish Garbanzo Salad! Vegan, gluten free, soy free and so delicious. Garbanzo beans are packed with insoluble fiber to help keep you fuller longer and help with digestive tract support ️ These little beans also help with regulation your blood sugar. What you need:
- 6 cans of garbanzo beans
- 1/2 cup pitted kalamata olives, rinsed, drained & pitted
- 1/4 cup diced Turkish apricots
- 3/4 cup red wine vinegar
- 3/4 cup avocado oil
- 1 Tbl minced garlic
- 5 tsp Dijon mustard
- 2 teaspoons dried oregano
- 5 tsp paprika
- 2 tsp salt
- 2 tsp black pepper
- 1/2 red onion, chopped
- 1/4 bunch Italian parsley, chopped
Whisk together vinegar, oil, garlic, Dijon mustard, oregano, paprika, salt and black pepper until dressing is combined. Toss with beans.
Combine onion, parsley, apricots, and olives with beans and dressing mixture. Let marinate in refrigerator for several hours before serving. As always, we recommend you make extras for left overs.
