Dinner last night was cabbage, kale, Israeli couscous, mushrooms and orange tomatoes, yum! Think colorful this holiday and make a meal full of color. We love making dinners that are healthy, look pretty and appetizing for guests. Purple foods help improve absorption and are a powerful antioxidant!
What you need:
2 pieces of purple cabbage
3 cups kale
1 cup mushrooms, diced
1/2 cup orange heirloom tomatoes, diced
1 cup Israeli couscous, prepared (Isreali couscous is not GF, use a different version if you are GF)
1/4 cup sunflower seeds
2-3 cloves of garlic
1 tbl healthandus seasoning
1 tbl curry powder
Prepare couscous as directed on box. Add garlic, mushrooms, kale to pan, cooking for 10-15 minutes or lightly cooked. Add sunflower seeds, healthandus seasoning and curry powder, then add prepared cous cous to mix together. Place cabbage in bowls and add all the ingredients from the pan, top with orange tomatoes.
