Pistachio Apricot Bars

Its National Pistachio Day so of course I wanted to make something fun to celebrate. These bars are simply devine, they are raw, vegan, and don’t take too long to make! The fresh orange zest adds a tasty kick.Hobnail and Hairties pistachio bars

What you need:

  • 3/4 cup raw cashews
  • 3/4 cup raw pistachios
  • 1/2 cup chopped dried apricots
  • 1 tsp. agave nectar or maple syrup
  • 1 tsp. coconut oil
  • 1 tsp. chia seeds
  • zest and juice of a small orange such as a clementine or satsuma
  • desiccated coconut for dusting
  • wax paper for pan lining

Get Makin’:

Using a small food processor, blend all nuts. Then add in apricots, and blend. Add fresh orange zest, coconut oil, chia seeds, agave nectar and blend.

Line a loaf pan with unbleached wax paper so you can easily remove bars. Start by covering bottom layer of pan with coconut, then mold in bars. Sprinkle coconut on the top layer and place in the refrigerator for 15 minutes. After that, you can remove and slice into bars. Store in wax paper and in the refrigerator.
